Located on the sixth floor of The First Rome – ARTE, just a few steps away from the most breath-taking places in Rome’s city centre, AcquaRoof Terrazza Molinari is ready to welcome you from morning until late at night.

Claudia Ceppaluni
Chef di cucina

Born in Naples in 1991, but raised in Frosinone. After high school she first enrolls at the University for an Electronics Engineering degree, but soon realizes that this was not her calling. From what was a natural and innate passion for cooking, appreciated by friends and relatives, she suddenly realizes she wants to turn this passion into a career. This brings her to enroll at ALMA, the Italian Cooking School of renown chef Gualtiero Marchesi, from which she graduates with the highest grades. In recognition of such achievement, she was awarded an internship in the historic Turin restaurant Del Cambio, just reopened after a profound restructuring and whose kitchen was handed over to Michelin star Chef Matteo Baronetto, where she remained for nearly three years. Driven by her curiosity to learn, she moved to London and worked at the restaurant Dinner by Heston Blumenthal, two Michelin stars, where she worked under the Meat Cook. After a year she decided to return to Italy and chooses Rome as her destination. From here she begins her career at Acquolina, where for the first few months she had the privilege of working alongside Chef Alessandro Narducci, and subsequently also received the honor of representing the cuisine of AcquaRood Terrazza Molinari’s kitchen.

Alessandro Simeone
Bar Manager

Born in 1989 in Rome from teetotalers parents, his father from Rome and his mother from Sicily. He defines himself as an alchemist, having a dynamic, cheerful and creative personality yet with an obsessive care for detail. He began peering into mixology when he was 22, gathering experiences in several places in Europe. After 4 years he came back to Rome and attended mixology classes and master’s degrees achieving great results. He also perfected his skills working in renowned cocktail bars and luxury hotels in the Eternal City. His style is innovative: to amaze the palate of his customers is his greatest satisfaction. Nonetheless, hospitality remains his major passion, because feeling at home while enjoying an excellent drink will always be a memorable experience.
He is currently the Bar Manager at AcquaRoof Terrazza Molinari.

Emanuele Pica
Head Sommelier

Emanuele was born in Frosinone in 1988. After high school, he began a computer engineering degree, but just a few exams before completing his degree he develops an interest in the wine and restaurant world. He decides to start working in the family pizzeria, where he starts by adding to the menu a small wine list. Not satisfied, he obtains a diploma AIS Sommelier and decides to pursue a new path by moving to Turin at the Rossorubino Enoteca. An experience that offers him the opportunity to work in a cellar of almost a thousand brands alongside two great professionals: the Gazzera brothers. He then moved to London, where he worked for Chef Marcus Wareing alongside the Head Sommelier Marco Iaccarino, with the opportunity to improve his English and above all to discover wines from all over the world. After this London based experience and his desire to return closer to home brings him to Rome. In January 2018 the greatest satisfaction comes, he becomes Head Sommelier and Restaurant Manager of Acquolina, whilst simultaneously curating AcquaRoof Terrazza Molinari’s wine selection.

Francesco Aldieri
Assistant Restaurant Manager

He began his professional experience with International Catering. By doing this he became extremely passionate on the world of wine, which pushed him to expand his knowledge by attending the Sommelier Course at the FIS of the Waldorf Astoria in Rome and two workshops specific to Burgundy and Loire. From this he started pursuing opportunities in fine dining, firstly at Castello della Castelluccia, elegant relais near Rome, mentioned on the Michelin guide, and later two years at the Big Al Restaurant in Viale Parioli. Finally, he arrives at Acquolina, Michelin star restaurant, working as Sommelier with Chef Alessandro Narducci. He is currently Sommelier at AcquaRoof Terrazza Molinari.

Every day, with dedication and perseverance, I try to express my passion for wine with the hope of transmitting this to our clients. As Napoleon Bonaparte said, “nothing makes the future as rosy as contemplating it through a good glass of wine”.

Andrea La Caita
General Manager

Born in 1976, Andrea La Caita graduated in International Relations at Sapienza University of Rome and obtained a Master’s degree in Business and Administration at LUISS Guido Carli University. In 2005 he began his adventure in fine dining with Il Vespa in Tivoli, gaining a Michelin Star two years later. In the following three years he managed La Sibilla in Tivoli together with Chef Adriano Baldassare. He then moved to Pescara, where he became General Manager of the Relais del cavaliere De Cecco, alongside 3 Michelin Star Chef Heinz Beck. He has also worked with Michelin star Chefs like Cerea and Esposito. In the meantime, he pursued an additional Master’s degree in Tourism Management at Milan’s Bocconi University. In 2017 he returned to Rome and partnered with the Troiani brothers, participating in the opening of Acquolina at The First Hotel. He is currently General Manager at AcquaRoof Terrazza Molinari.
